Over the holidays my husband received caramels from a customer. He was drooling for days over how good they were. This prompted me to make my own. I found this Soft Caramels recipe online and proceeded to making the best caramels.
I stuck to the recipe, including utilizing aluminum foil. You definitely need to use something, so the screaming hot caramel comes back out of the pan, but I am not thrilled with the aluminum. I chilled the second batch and used a knife to cut the caramel free - less work than the prior attempt. I haven't tried it, but I am thinking of exchanging the aluminum for parchment paper next time. Share your thoughts and let me know how it goes if you try it.
I can say this THEY ARE DELICIOUS!

I like the new look! I will not click on the caramels recipe as I am in the midst of a 10-lb. weight reduction plan. Sugar is my downfall.
Wow, that was fast - thank you! Like 444 I am in the 10lb weight loss challenge too but I think they would make a great gift item, and I have to say, caramels are my downfall!

Definitely not a low calorie treat, so we all should avoid them.
Good luck with the 10-lb challenge! I was contemplating joining, but I'm not feeling confident in this area at the moment. I'll just go back to classes - lost 7-8 pounds last semester. Too bad I gained 5 back (as of yesterday) on break. urgh!
I could not stop myself from looking at the recipe. I printed it and I will make it - just not this month. It's in my binder notebook (my black book of recipes.)
